Something lovely in the middle of the table
A bowl of something creamy, warm bread within reach, a little lemon on your fingertips. Beautiful soul, I love food that invites us to gather without making a production of it. This dip is soft and garlicky, with that lovely artichoke tang. Mmmm, one more little scoop.
White beans give us the silky base, olive oil rounds it out, and lemon keeps everything bright. There is no cheese or cream here, just simple plant ingredients becoming something generous. Spoon it onto toast, tuck it into a sandwich, or let it be the heart of a little grazing plate.
Creamy pleasure, grounded nourishment
White beans bring plant protein, fiber and iron. Artichokes contribute fiber too, while olive oil adds mostly unsaturated fats. A dipping portion is smaller than a whole meal, so pair it with whole-grain pita and extra beans, tofu or another protein food if you want a more substantial lunch.
Serve with fresh red pepper strips for crunch and vitamin C, which can help with absorption of plant iron. Lemon adds brightness, but this dip is not a complete nutrition plan or a reliable B12 source. Canned beans and artichokes can be salty, rinsing and tasting before seasoning help.
A little patience makes it silky
Drain the artichokes well, watery hearts make a loose dip. Blend the beans first, scrape the bowl and give it another moment before reaching for more liquid. Add water a spoonful at a time until the texture feels lovely to you.
Raw garlic becomes more noticeable as the dip rests, so start small. Finish with parsley, a little olive oil and a few chopped artichokes if you like. No perfect swirl required, love. Just something delicious to share. Krystal x
The recipe
White Bean, Artichoke & Lemon Dip
- Serves
- 6
- Prep
- 15 minutes
- Cook
- No cooking
Ingredients
- 2 cans (400 g each) cannellini beans, drained and rinsed, about 480 g drained total
- 150 g artichoke hearts canned in water or brine, drained well; reserve a little for garnish if desired
- 2 tablespoons extra-virgin olive oil, plus a little optional drizzle
- 2 tablespoons fresh lemon juice, plus more to taste
- 1 teaspoon finely grated lemon zest
- 1 small garlic clove, peeled and roughly chopped
- 2–4 tablespoons cold water, as needed
- ¼ teaspoon salt, or less if the artichokes are salty
- Freshly ground black pepper, to taste
- 1 tablespoon chopped fresh parsley, to finish
- Vegan pita, cucumber and fresh red pepper strips, to serve
Method
- Drain and rinse the beans, then let excess water drip away. Drain the artichoke hearts thoroughly and pat dry if needed. Reserve a few chopped pieces for garnish if desired.
- Put the beans, remaining artichokes, olive oil, lemon juice, zest and garlic in a food processor. Blend until creamy, stopping to scrape down the sides.
- Add cold water a tablespoon at a time, blending between additions, until smooth and scoopable. Start with 2 tablespoons and add only what the dip needs.
- Taste before adding salt, then season with pepper and extra lemon juice if desired. Transfer to a serving bowl and finish with parsley, reserved artichokes and an optional small drizzle of olive oil.
- Serve with vegan pita and crunchy vegetables. Keep the remaining dip refrigerated rather than leaving the whole batch out for an extended period.
Notes & storage
Makes about six appetizer portions. Use cooked canned beans, not raw or undercooked dried beans. If cooking beans yourself, prepare them fully in advance and allow extra time.
The dip contains no added nuts or sesame, but check all package labels for allergens. Pita usually contains wheat; use gluten-free crackers or vegetables if avoiding gluten. Check pita for dairy and honey.
Choose plain artichoke hearts in water or brine for these amounts. Oil-marinated hearts bring extra oil and seasoning, so using them changes the balance.
Refrigerate promptly in a sealed container for up to 3 days. Stir before serving and loosen with a little water if needed. Garlic flavor can deepen as it sits.
