Vegan on a Budget: Eating Beautifully for Less

Vegan doesn't have to mean expensive. My favorite money-saving staples, habits and meals that still feel abundant.

Bags of rice, lentils, beans and oats with bananas, carrots, cabbage, onions and canned tomatoes

Abundance isn't about price

Beautiful soul, here's a secret: some of the cheapest foods in the world are vegan. Rice, beans, lentils, oats, potatoes, cabbage, bananas. Whole cultures have built gorgeous cuisines on them. Fancy vegan cheeses are a treat, not a requirement.

Your budget heroes

Dried lentils and beans (cheaper than canned, and red lentils cook in 15 minutes), rice, oats, pasta, potatoes, sweet potatoes, carrots, onions, cabbage, frozen vegetables and fruit, canned tomatoes, peanut butter, bananas and tofu, which is often one of the cheapest proteins in the store.

Habits that save

Plan a few meals and shop with a list. Buy grains, legumes and nuts in bulk. Shop at Asian, Indian and Middle Eastern grocers, spices and tofu are often much cheaper there. Frozen berries and spinach are just as nourishing as fresh and never go to waste.

Batch-cook a big pot on Sunday: dal, chili, curry or soup. Freeze portions. Future you will feel so loved.

Meals under a few dollars

My Red Lentil & Spinach Coconut Dal with rice. Bean and rice burritos. Peanut noodles with cabbage and carrots. Overnight oats with banana. Potato and chickpea curry. Simple, filling, delicious, and so kind to the planet and your wallet. Krystal x
