A little Venus in a bowl

Roses have followed me my whole life. They’re Venus’s flower, beauty and softness with thorns that remind us softness isn’t weakness. So of course I had to put them in dessert.

This is the simplest treat I know: frozen bananas and strawberries blended until they turn impossibly creamy. A few drops of rose water make it feel like something from a palace garden.

Sweetness from fruit

Bananas give natural sweetness and potassium; strawberries bring vitamin C and fiber. It’s a lighter way to say yes to dessert, and it’s still dessert. Enjoy every spoonful.

Rose water, gently

Rose water strengths vary a lot between brands. Start with ¼ teaspoon, taste, and add more by the drop, too much can taste like perfume. If you scatter dried rose petals on top, make sure they’re food-grade and unsprayed.

Strawberry Rose Nice Cream

Ingredients

  • 2 ripe bananas, peeled, sliced and frozen until solid (at least 6 hours)
  • 1½ cups (225 g) frozen strawberries
  • 2–4 tablespoons plant milk
  • ¼ teaspoon food-grade rose water, plus more to taste
  • 1 teaspoon maple syrup (optional)
  • Food-grade dried rose petals and fresh strawberries, to serve (optional)

Method

  1. Let the frozen fruit sit at room temperature for 3–5 minutes so it is easier to blend.
  2. Add the bananas, strawberries, 2 tablespoons plant milk and rose water to a food processor or high-powered blender.
  3. Blend for 3–5 minutes, stopping to scrape down the sides, until smooth and creamy. Add more milk a tablespoon at a time only if needed.
  4. Taste and add more rose water by the drop or maple syrup if you like. Serve right away as soft-serve, or freeze in a covered container for 1–2 hours for a firmer scoop.

Notes & storage

Use very ripe, spotty bananas for the best sweetness. The banana freezing time is not included in the prep time.

Choose rose water labeled for culinary use. Freeze leftovers and let soften for 10 minutes before scooping.
