A little love affair with lunch
I’ll be honest… some of the most delicious meals of my life weren’t fancy at all. A bowl of chickpeas, whatever vegetables were fresh, a squeeze of lemon, eaten slowly with people I loved. After years of traveling and sharing simple meals with strangers who became family, this is still the lunch I come home to.
Beautiful soul, nourishment does not have to be complicated to feel divine. Think cool, crisp cucumber, tomatoes bursting with juice, and soft chickpeas wrapped in that silky lemon-tahini dressing. Mmmm… so many textures, all in one generous bowl.
I want food to invite us back into our bodies, not pull us into another set of rules. A squeeze of lemon, a handful of herbs, a moment to actually taste what is on your fork. To me, that is where an ordinary lunch can become a small act of devotion.
Spoon it over warm grains, tuck it beside some bread, or let it be its own beautiful thing. This makes two generous portions or four smaller sides. You get to choose what feels satisfying, not what makes your plate look the most disciplined.
Plant protein, with pleasure
The chickpeas are our main source of vegan protein here. They also bring fiber, folate and iron to the table. Tahini adds a little more protein along with fat and that lovely creamy texture. No need to make the chickpea glamorous with a complicated label; this humble pulse already has plenty to offer.
Want a more substantial meal? Add tofu, extra chickpeas or a side of edamame. Grains can bring variety too. I would rather build a generous plate than turn lunch into a tiny bowl that leaves you wanting more.
A little nutrient wisdom
The iron in chickpeas is non-heme iron, the form found in plant foods. Vitamin C can help your body absorb it, so the lemon and tomatoes are lovely companions; diced red pepper is another vitamin C-rich addition.
This bowl is not a reliable vitamin B12 source on its own. A thoughtfully planned vegan diet still needs dependable B12 from fortified foods or an appropriate supplement plan. Pleasure and practical nourishment belong together, love.
Make it yours, love
For extra freshness, swap some parsley for mint. For more crunch, add red pepper. Keep the dressing separate when preparing ahead so the cucumber stays crisp; a little water loosens tahini beautifully if it thickens in the fridge.
Tahini is made from sesame, so it is not suitable for someone with a sesame allergy. For a sesame-free dressing, leave out the tahini and water and use the lemon juice and olive oil instead. Choose extra protein from an ingredient that suits your needs if you want a heartier bowl.
