A soft little yes to pleasure
Pleasure isn’t a reward you earn after being good enough. I’ve had to learn that one slowly, and I’m still learning it. This mousse is my little reminder: you’re allowed to want something purely because it tastes divine.
Beautiful soul, sometimes I just want chocolate. Not a lesson in discipline, not something I have to earn. A small glass of something silky and deeply delicious, a spoon, and a moment that belongs to me. Mmmm… this is that kind of dessert.
Silken tofu is our quiet little secret. Blended with melted dark chocolate, it makes a velvety, softly set mousse without cream or eggs. This is a rich, creamy mousse rather than the airy texture of whipped egg whites. Add raspberries for that gorgeous tart contrast, or simply let the chocolate have its moment.
Chocolate meets vegan protein
The tofu brings soy protein to our dessert. The amount varies by brand, so check the packet if you are tracking protein; I am not going to promise a number that your ingredients may not deliver. Use silken tofu, not the firm block you would stir-fry, texture matters here, love.
Calcium depends on how the tofu is made, too. Look at the nutrition label rather than assuming every tofu is a generous source. Chocolate contributes flavor and some minerals, but this is still a sweet treat, not a substitute for a varied meal or a reliable source of vitamin B12.
The secret is in the temperature
Let your tofu lose its refrigerator chill before blending, and let the melted chocolate cool until just warm. Very cold tofu can make chocolate set into little flecks before it blends. Scrape the blender, blend again, and give it time in the fridge to become that lovely spoonable texture.
I would finish mine with a few raspberries and chocolate shavings. An orange zest whisper is beautiful too. Choose a dairy-free chocolate you already enjoy eating; its sweetness and cocoa percentage shape the whole dessert.
The recipe
Easy Vegan Chocolate Mousse
- Serves
- 4
- Prep
- 15 minutes
- Cook
- 5 minutes
- Chill
- 2 hours
Ingredients
- 300 g (10.6 oz) silken tofu, excess liquid drained (do not press)
- 150 g (5.3 oz) dairy-free dark chocolate, around 60–70% cocoa, chopped
- 1–2 tablespoons maple syrup, to taste
- 1 teaspoon vanilla extract
- A small pinch of salt
- ½ cup (60 g) raspberries, to serve (optional)
- Vegan chocolate shavings, to serve (optional)
Method
- Take the tofu out of the fridge about 20 minutes before blending; keep this brief and return the finished mousse to the fridge promptly. Drain off loose liquid without pressing.
- Melt the chocolate in a heatproof bowl over gently simmering water, without letting the bowl touch the water. Stir until smooth, remove from the heat, and let cool for a few minutes until just warm, not hot.
- Blend the tofu, 1 tablespoon maple syrup, vanilla and salt until completely smooth. Scrape down the sides.
- Add the melted chocolate and blend again until silky, scraping as needed. Taste and add the second tablespoon of maple syrup if you like.
- Divide into four small glasses, cover, and refrigerate for at least 2 hours until softly set. Top with optional raspberries and chocolate just before serving.
Notes & storage
Contains soy; check chocolate for milk and other allergens. Firm or extra-firm tofu will not give the same silky result.
The 15-minute prep time excludes the brief time taking the chill off the tofu. Chocolate brands vary; use the weights for the most consistent ratio.
Keep covered in the refrigerator and enjoy within 3 days. This mousse sets through melted chocolate, do not swap it for cocoa powder alone.
