A purple little love letter to your morning
Beautiful soul, this is the kind of breakfast I would want to sit with for a moment. Deep purple açaí, cool berries, banana sweetness, a little almond butter melting into every spoonful. Mmmm. Something bright, something creamy, something that makes the morning feel like it belongs to you.
Soy yogurt and optional plant-based protein give this bowl a creamy base. Açaí is an Amazonian palm fruit, not a magical powder; frozen unsweetened puree gives us that earthy berry flavor and gorgeous color.
Superfood is a lovely name, not a medical promise
Açaí contains plant pigments called anthocyanins. The fruit, banana and berries contribute a mix of fiber and other nutrients, but no single bowl detoxes the body or guarantees better health. I love it for flavor, texture and the way it invites me to enjoy breakfast.
Soy yogurt, optional pea or soy protein powder and hemp seeds bring vegan protein. Amounts depend on the products and toppings, so there is no fixed protein promise here. Choose fortified soy yogurt or milk if you want them to contribute calcium and B12, and check the labels. A few tablespoons of milk alone do not make a protein-rich meal.
Keep it thick and delicious
Use a frozen puree packet, not a spoonful of açaí powder, they are not interchangeable in this recipe. Start with very little milk, stop the blender before scraping, and let the frozen fruit become soft enough for your machine to handle safely.
Scatter on whatever feels lovely: fresh fruit, hemp seeds, a little vegan granola, a swirl of almond butter. Pretty rows are optional, pleasure is not. Krystal x
The recipe
Açaí Superfood Bowl
- Serves
- 1
- Prep
- 5 minutes
- Cook
- No cooking
Ingredients
- 1 packet (100 g) unsweetened frozen açaí puree, not açaí powder
- ½ ripe banana, sliced and frozen
- ½ cup (75 g) frozen mixed berries
- ½ cup (120 g) plain unsweetened soy yogurt
- 2–4 tablespoons unsweetened soy milk, preferably fortified
- 25 g vegan pea or soy protein powder, optional
- 1 tablespoon shelled hemp seeds
- Optional toppings: fresh banana, strawberries or blueberries, 2 tablespoons vegan granola and 1 tablespoon almond butter
Method
- Let the frozen açaí packet soften just enough to break into chunks, following its package guidance. Put the chunks, frozen banana, berries, soy yogurt, 2 tablespoons soy milk and optional vegan protein powder in a sturdy blender.
- Blend until thick and smooth, stopping and switching off before scraping the sides. Use only the blender's fitted tamper if designed for it. Add milk a tablespoon at a time only as needed; extra powder may need a little more liquid.
- Spoon into one bowl, top with hemp seeds and any optional fruit, vegan granola or almond butter, and enjoy immediately while cold and thick.
Notes & storage
The five-minute prep assumes your fruit is already frozen. Freeze banana slices until solid in advance. Use unsweetened frozen puree with no dairy or added sweetener.
Contains soy and optional almonds; check protein powder and granola for allergens, dairy and honey. Use a plant-based powder, not whey or casein.
Best freshly blended. If needed, freeze the untopped mixture promptly in a sealed container for up to 2 weeks; soften slightly and reblend before serving. The texture may change.
